The Princeton puts gin and port together – a stark contradiction to the gin martini so often associated with gin. Port is sweet enough to be considered a dessert wine.
Combined with gin and not one but three dashes of orange bitters, that sweetness becomes subdued but it’s still there. The top notes in this drink are tart, with herbal following close behind and the sweetness underlying everything else. The combination can make gin palatable to gin haters, or port palatable to port haters.
Recipe
- 2 ounces gin
- 3/4 ounce port
- 3 dashes orange bitters
Pour all ingredients into a martini glass and stir. Garnish with an orange wedge.
