The Spicy Apricot Margarita comes from Guy Goldstein at Bustan in New York. It blends apricot puree with tequila, flavors of lime and orange, and jalapeño. You get to choose your own heat level with this one.

You can make this drink two different ways, depending on how hot you want it to be. If you remove the seeds from the jalapeño before muddling, it’ll be spicy.

If you leave the seeds in, it’ll be very spicy. Also, the longer you muddle, the spicier it will get. Don’t worry, though – the spice won’t get out of hand.

You only muddle two little slices of jalapeno, and they have to compete with apricot puree, lime juice, triple sec and tequila.

You can buy apricot puree or you can make your own with a blender or food processor. A Vitamix is ideal for this kind of pureeing, but you could also use a Ninja Chopper.

That makes this a great drink to serve to guests because you can ask their preference and customize the drink for them. That makes you look like the most considerate host ever, and also really clever.

You can even let guests try it both ways. And in a pinch, if you have a guest who doesn’t like spice at all, you could always leave out the jalapeno altogether.

This is a very refreshing summer margarita, and that extra edge of spice (I leave the seeds in) makes it really special. The apricot also adds something wonderful.

The classic margarita has fruit flavors of lime and orange. This drink adds apricot, too, and its mellow flavor balances the spicy and the other fruit flavors perfectly.
