I have a little confession to make. I don’t like honeydew melons or anything that tastes like them, so I don’t love Midori the way most people do. But after creating the Summer Heat cocktail, I got to wondering if ginger liqueur might provide the perfect contrast to that sweet, mellow flavor.

This recipe evolved through trial and error, and you should feel free to tweak the ingredient ratios. If you love Midori, feel free to bump it up to a full ounce and drop half an once of vodka (or not).

You’ll still get the ginger and lemon flavors loud and clear, but the honeydew will be dominant. The way I’ve written the recipe, the honeydew, ginger and lemon flavors all mingle into one note.

It’s sweet, spicy and tart, but it would take you a moment to guess the ingredients if you didn’t already know.

The Angostura bitters enhance the spicy notes from the ginger liqueur. I love the spice – there are cocktails in which I double the amount of bitters called for in the recipe – but if the ginger liqueur itself is spicy enough for you already, you could leave out the bitters.

Because this recipe is so tweakable, it’s fun to give guests a little taste and get their feedback.  Then you can tweak the drink ingredient ratios to their individual tastes.
