Junior Mint drink: a candy cocktail recipe

The Junior Mint drink tastes exactly like you’d expect – very much like a Junior Mint candy. Only it’s a shot, not a candy, and it’s all alcohol.
It’s chocolatey and minty, but there’s a hint of something else, something surprising. It’s the Malibu Coconut Rum. The recipe doesn’t use enough of it to add any noticeable coconut flavor, which wouldn’t taste like the candy at all. It just adds a touch of something rich that’s hard to pin down, but essential to the flavor of the drink.
This is a great drink to make big batch style in pitchers and serve to guests. The recipe I used calls for shaking the cocktail, but I found you can just pour the ingredients into a pitcher and give them a good stir. Stick the pitcher in the fridge, and bring it out to pour drinks as needed.
This drink has no color. It’s a totally clear shot, so I like to dress it up by jamming a mint sprig down in the shot glass. You could serve it with Junior Mint candies. You could also do a chocolate rim on the shot glasses, although I personally find a rim on a shot glass awkward. It tends to get all over your nose. So even though the mint sprig looks pretty absurd, I think it’s kind of fun and unique. Of course, you can absolutely just pour clear shots into glasses and enjoy them that way.
The Junior Mint makes a great after dinner drink, and even a dessert substitute. You can also enjoy it along with dessert, particularly anything with chocolate and/or mint.
