Flavor Profile
The origins of this drink is unknown, but the flavor makes it hard to imagine it wasn’t based on the Cheesecake Factory’s White Chocolate Raspberry Cheesecake. Like the cake, this cocktail combines the flavors of raspberry, chocolate, vanilla and cream cheese (yes, it uses actual cream cheese) to create a drink that really tastes like a slice of that cheesecake.
Variations
You can change this recipe up if you like. It doesn’t contain any hard liquors, so if you want to make it stronger, you can add an ounce of vodka. Or rum.
If you don’t eat dairy, you can certainly use non-dairy alternatives to the ice cream and cream cheese. If you can’t find a non-dairy cream cheese, just leave it out and add a half-scoop more ice cream. It will lose the cheese flavor, but still be delicious.
Chambord is fantastic in this recipe, but so is DeKuyper Razzmatazz. Any raspberry liqueur will work.
And feel free to add as many raspberries as you like, and even some blueberries, blackberries, or strawberries. It will obviously change the flavor profile, but it’ll be fantastic.
Big Batch Version
This one is nice to mix up in batches, although it doesn’t do so well when you make it up beforehand and let it sit in the fridge for more than a few hours. You can mix it up as servings of dessert right before dinner and keep it that way.
During a party, you can just multiply the ingredients by how many you want to make. For example, to make 4 servings, you’d use: 4 oz. white creme de cacao, 4 oz. ounce Chambord, 4 tablespoons cream cheese, 8 scoops vanilla ice cream, 2 cups crushed ice, and optionally 8 ounces fresh raspberries.

Ingredients
- 1 ounce white creme de cacao
- 1 ounce Chambord
- 1 tablespoon cream cheese
- 2 scoops vanilla ice cream
- 1/2 cup crushed ice
- Optional: 2 ounces fresh raspberries
- Garnish: several fresh raspberries
Instructions
- Pour all the ingredients into a blender.
- Blend until smooth.
- Pour the mixture into a parfait glass.
- Optional: garnish with whipped cream and raspberries.
