The Resolute cocktail features apricot brandy, an ingredient people tend to love or hate due to the sweetness. But don’t write it off yet – in this recipe, there are strong citrus notes to balance out the brandy.

Now, the thing about this kind of drink is that you need to use good quality spirits. Pick a nice, drinkable gin like Hendricks. Your apricot brandy choice is especially important. So many “apricot brandies” in liquor stores have a medicinal or saccharine taste – that’s why the spirit has such a bad name.

You need a brand like Marie Brizard Apry, which is really more of an apricot liqueur featuring cognac. It’s very sweet, but not cloying. Think amaretto, only with more of a hint of apricot.

This is a nice drink for a backyard party  or barbecue in the afternoon or evening. You can fix up a big batch in a pitcher of it to make refills easy. It’s strong enough that you can also serve it over ice.

This is not your typical modern fruit-juice sweetened cocktail, so some guests used to those types of drinks may find this one too dry. I’d suggest keeping simple syrup on hand for them to add and stir as needed.

If you’re serving this with food, consider seafood or chicken recipes, and anything involving nuts, such as Thai Chicken with Cashews from The Wanderlust Kitchen, or Macadamia-Crusted Chicken with Honey-Mustard Sauce from Paleo Newbie.

If you like this drink, be sure to check out the Ethel Duffy, which blends creme de menthe with apricot brandy. Or the Favorite Cocktail, which is a lot like this one, only with dry vermouth added.
